Sweet + Sour Radish Pods + Black Beans
I let my radishes grow very tall + go to seed because the guinea pigs love the leaves more than I love the radishes! To my delight the flowers turned to pods, which I ended up googling + discovering were edible! This is the first thing I created with them + it is delicious! You could do the same with mange tout or any kind of podded vegetable.
Ingredients:
200g c200g radish pods (or mange tout/sugar snap peas)
2 tbs sesame oil (not toasted because you are going to cook it)
1 can of black beans (drained + rinsed)
1 tbs tamari
1 tsp maple syrup
1 tbs toasted sesame seeds
Cooked brown rice to serve (if you choose)
Method:
Prepare the sesame seeds by lightly toasting in a dry frying pan.
Remove the sharp ends of the pods with a knife, but leave them whole.
Heat the sesame oil in a frying pan, and fry the pods until they soften (this will be different timings depending on what kind of pod you are using).
Add the tamari + cook for 1 minute.
Add in the black beans (you can add in more than one can if you want to make more of a meal out of it).
Mix through the maple syrup and toss through the toasted sesame seeds.
Add sea salt to taste.
Serve with brown rice.
