Zesty Avocado Mousse
Ingredients:
1 large ripe avocado
1 tsp vanilla extract
1 large tbs almond butter
Juice of 1 lime
1 tbs raw honey (more or less to taste)
A splash of almond mylk to get a creamy consistency (start with 2 tbs and keep adding more slowly if needed)
A quick grind of sea salt
Bee pollen, cacao nibs – and/or whatever you fancy to serve!
Instructions:
Blend it all together in blender.
Top with chosen toppings.
Enjoy – I like this for breakfast…with all the healthy fats, fibre and protein, it keeps me going until lunch, especially if paired with a delicious green smoothie!
