Zesty Avocado Mousse

 
 

Ingredients:

  • 1 large ripe avocado

  • 1 tsp vanilla extract

  • 1 large tbs almond butter

  • Juice of 1 lime

  • 1 tbs raw honey (more or less to taste)

  • A splash of almond mylk to get a creamy consistency (start with 2 tbs and keep adding more slowly if needed)

  • A quick grind of sea salt

  • Bee pollen, cacao nibs – and/or whatever you fancy to serve!

Instructions:

  1. Blend it all together in blender.

  2. Top with chosen toppings.

  3. Enjoy – I like this for breakfast…with all the healthy fats, fibre and protein, it keeps me going until lunch, especially if paired with a delicious green smoothie!
