Supercharged Breakfast

Ingredients (use organic where possible):

  • 1-3 tbs chia seeds (pre-soaked overnight in a 1/3 cup of dairy free mylk)

  • 4 tbsp sprouted buckwheat (instructions here)

  • 1 tbs goji berries

  • 4 unsulphured apricots, chopped into pieces

  • 8 almonds, soaked and chopped (or pre-activated nuts)

  • Cinnamon to taste

  • Any crunchy toppings such as pumpkin seeds, cacao nibs, goji berries, bee pollen

  • Chosen dairy free mylk (maybe try this)

Instructions:

  1. Combine the buckwheat and pre-soaked chia seeds in the bowl, with the goji berries, almonds and apricots and cinnamon (if using). Add more mylk to get the desired consistency. Add the raisins, pumpkin seeds, cacao nibs and bee pollen.

  2. If you are taking this as a snack to work, you could do the first stage at home and then take the second set of ingredients in a separate container (the crunchy bits), as well as the milk, and finish it off at work, so it doesn’t all get too soggy.

  3. Enjoy knowing you are nourishing your body with an incredible amount of goodness and health…wow what a start to the day! Combined with a green smoothie you will be skipping around all morning and glowing like never before.
